12-week paid training program. No prior pit experience required. You shadow every station — fire, rub, wrap, rest, slice — for one shift each, then rotate.

  • Shadow each pit station for a full shift before rotating
  • Read The Wood Whisperer and Aaron Franklin during off-hours (we cover the books)
  • Pass a knife-skills and food-safety check by week 6
  • Cook a packer brisket solo by week 12
Qualifications
  • Genuine interest in wood-fired BBQ as a long career
  • Reliable transportation to the Cantina before 5am
  • No prior pit experience required

Pit Cook

The Cantina

Tend the overnight pit at the Cantina. 14-hour brisket cycles. Stick burners + one pellet. Work directly with the pitmaster on rotation, fire, rest, slice.

  • Tend stick burners and one pellet smoker across an 8-hour shift
  • Pull packers at probe-soft, stage in the rest room per the rest-room protocol
  • Carve to spec on Saturdays
  • Clean down stations to commissary standard
Qualifications
  • 1+ year working a wood-fired pit (we will train the right home pitmaster)
  • Comfortable with overnight rotations and a 4am brisket pull
  • ServSafe within 60 days of hire

  • Run drinks from the bar to the tables
  • Bus and reset tables during the Saturday rush

  • Comfortable on your feet for an 8-hour shift

Mash Mechanix

Run the Mash Mechanix truck day-to-day. 4 staff. Friday/Saturday peak, lighter midweek. Own the cleanliness, the line speed, the brewery relationship.

  • Open and close the truck cleanly
  • Manage three direct reports across the service window
  • Liaise with the brewery taproom GM on Saturday crowd flow
  • Hit the 8-minute ticket-time target during rush
Qualifications
  • 2+ years food-service line experience
  • Calm head under a 90-cover-an-hour rush
  • Driver license preferred (the truck moves rarely but does move)
