Stage Stop BBQ has four locations across Colorado Springs: The Cantina flagship at 6620 Old Stage Rd, plus brewery-partner stops at Mash Mechanix downtown, Old Colorado City westside, and Urban Animal at Star Ranch on the southside. Every location runs Chef Eve Natasha's recipes, real wood smoke, and a 14-hour brisket.

Texas-influenced offset-smoked BBQ with Carolina and Alabama sauce styles on the side. Post oak for brisket, pecan for ribs, apple for poultry. No gas assist, no liquid smoke. Sauce is served on the side by default.

Eve Natasha is the owner, founder, and head chef. She grew up on Old Stage Ranch, learned to smoke from her dad, and writes every recipe at every Stage Stop location. She is a 2024 James Beard Best Chef Mountain finalist.

The Cantina is open Wed–Sun 11a–8p. Mash Mechanix and Old Colorado City are open Thu–Sun. Urban Animal at Star Ranch is open daily. See each location page for live hours.

Yes. Most meats are naturally gluten-free — no flour in our rubs or sauces. All sides are clearly marked GF on the menu. Tell the cashier and we'll glove-change.

Fourteen hours minimum, over post oak. Salt-and-pepper rub only — no sugar. Sliced to order. Brisket is available daily at every location until it sells out.

Our brand-IP dish. Cavatappi pasta, three cheeses, brisket burnt ends, scallion, crisped on the flat-top. $15 at every Stage Stop.

Five house sauces: Carolina Gold (yellow mustard + brown sugar), Alabama White (mayo + black pepper), Texas Black (molasses + ancho), Sweet Heat (peach + habanero), and Stage Stop Original (tomato base, vinegar finish). All five available as a $4 sauce flight.

Yes. Smoked Mushroom & Halloumi sandwich, 12-hour Smoked Tofu Plate (vegan), and Just the Mac (vegetarian). Most sides are veg-friendly.

The core menu is stable — brisket, ribs, pulled pork, the sauces, the Mac Bowl. Daily specials rotate based on what came off the smoker overnight and what Eve felt like running. Truck-only specials show up at the brewery stops some weekends.

Dairy lives in the mac, the slaw, the cornbread, and the white sauce. Soy is in the brioche buns. We don't cook with peanuts, but we can't guarantee a nut-free kitchen — tell the cashier and we'll glove-change and pull a fresh container.

Yes. Half-sandwich plus one side, $9 — pulled pork, brisket, or chicken on a slider bun. Mac, cornbread, or apple as the side. Free birthday meal applies to kids too.

Brisket usually goes first — we post a brisket countdown on the chalkboard inside The Cantina as we get close. When it's gone, it's gone. We don't hold back portions; you get the day's smoke or you come back tomorrow.

Yes, up to 10 people through Toast online — pick your pickup time and we'll have it bagged and labeled. For 10 or more, use the catering page so we can plan the smoker count instead of robbing the line.

All five house sauces in small ramekins — Carolina Gold, Alabama White, Texas Black, Sweet Heat, and Stage Stop Original. $4 add-on. We serve sauce on the side, always, so you can read the meat before you dress it.

Smoked meats keep four days in the fridge, three months in the freezer if you wrap tight. Reheat brisket low and slow — 250°F covered, with a splash of beef broth — not the microwave. Sauces last a month opened.

20 people for drop-off · 30 for Pitmaster Spread · 50 for Full Smokehouse on-site. Below that, we'll point you at a great alternative — no hard feelings.

30 miles from Colorado Springs is free. Up to 90 miles with a delivery fee. Anywhere in Colorado with enough notice and the right number of people.

Vegetarian and vegan plates available on every package — three options each. Gluten-free buns on request. Halal and kosher: ask us, we'll be honest about what we can and can't do for your event.

We don't pour, but we'll coordinate with your bar service and we can recommend brewery partners (with rep contacts) if you want beer at the event. Same for spirits.

18% gratuity (split among the catering crew · 100% of it). State + local sales tax. Delivery fee depends on distance — shown up front, no surprises.

25% deposit holds the date. Refundable outside 14 days. Inside 14 days, deposit is non-refundable but applies to a future event within 12 months.

Yes — we work with most of the major Colorado Springs, Denver, and mountain wedding venues regularly. We carry $2M liability, full ServSafe certification, and our COI on file for the big ones.

Summer weekends book 8–12 weeks out. Holiday season (Nov–Dec) opens in August and fills by October. Weekday corporate lunches we can usually turn in 7–10 days. Inside a week, ask — we keep a little flex on the smoker for last-minute requests.

Drop-off: we deliver hot in chafers, set the buffet, walk you through it, and you run it. Served on-site: a pitmaster stays to carve, replate, and answer questions. Drop-off is BBQ Basics + Pitmaster Spread; on-site is built into Full Smokehouse or adds $4/person plus pitmaster fee on the others.

Chafers, serving utensils, sterno, and disposable serving ware are included on every package. Pitmaster Spread adds real serving platters. Full Smokehouse adds linens, real platters, table runners, and the carving station setup. We pack out everything we brought.

Sometimes. Drop-off for 20–50 people inside 7 days — we'll quote if the smoker calendar has room. Anything over 100 or full-service inside 14 days usually means we're already booked. Always worth a call.

Active military, veterans, first responders, and registered 501(c)(3) non-profits: 10% off the per-person price on drop-off packages. Bring proof or paperwork. Doesn't stack with weekday corporate rates.

BBQ Basics starts at $14/person (drop-off, one meat, two sides). Pitmaster Spread is $22/person (two meats, three sides, dessert). Full Smokehouse is $32/person (three meats, four sides, pitmaster on-site). Custom builds quoted line-by-line.

Phone number at checkout. The Toast system recognizes you, applies the discounts automatically (free side, $1 off draft, double points, etc.), and prints them on the receipt. You don't have to remember anything.

No. The mug is a brand object — bring it if you want it filled with our brewery partner's beer at the bar (some bartenders fill it heavy, that's between you and them). Perks work whether you bring it or not.

Yes — $20 replacement, same number, same name. Mugs are dishwasher-safe but not drop-safe.

Annual plans don't refund mid-year, but you can cancel auto-renew anytime — you keep all benefits until your renewal date. Monthly plans cancel anytime, end of current month. The mug is yours either way.

Yes — once Manitou, Pueblo, and Denver open, your existing mug and membership work there day one. That's part of the deal.

Yes. Chef Eve Rewards is free, anyone can join at checkout — earns points, gets birthday free side. Mug Club is the paid tier: numbered mug, real perks, real money back.

Not the numbered mug — your name is on it. The perks side (drafts, points, BOGO) is tied to your phone number, so it travels with you, not a transferee. Gift memberships are a separate purchase if you want to set someone up.

First 14 days, full refund minus the mug shipping cost if it already went out. After 14 days the membership is non-refundable, but you keep every perk through your renewal date. Cancel auto-renew anytime.

Mostly the same. $1 off draft applies to the brewery taproom pour at Mash Mechanix, OCC, and Urban Animal Star Ranch — those are our partners' beers, and they honor the mug. The Cantina has its own bar with house drafts and the same $1-off applies there. Free side and double points work at every stop.

Auto-renew on the anniversary of signup. We send a 30-day reminder email before the charge — turn off auto-renew in your account or reply to the email if you want to skip. No surprise charges, no marketing emails between renewals.

No formal pause — but monthly plans cancel anytime, end of current month, so a one-month break costs nothing. Annual members can cancel auto-renew and re-up later (you'll re-queue for a new mug number if you let it lapse more than 90 days).
