Three things we don’t compromise on.

Every location runs Chef Eve's recipes. Every truck pulls up to a brewery we actually like. Every brisket sits in the smoker for fourteen hours, minimum.

01 / Smoke

Real wood, no shortcuts.

Post oak and pecan, hand-loaded into Texas-style offsets. No gas assist. No liquid smoke. Brisket sits for fourteen hours. Ribs for six. The smoke does the work.

02 / Beer

The brewery is the destination.

We park where the beer is good. Mash Mechanix, Old Colorado City, and Urban Animal at Star Ranch. The brewery pours, we feed. Your Mug Club membership works on both sides of the counter.

03 / Eve

One chef, every location.

Chef Eve grew up on the ranch, learned to smoke from her dad, and writes every recipe herself. Sauces are hers. The pickle brine is hers. If it's on the menu, she signed off.

The model

Every brewery becomes a stage stop.

We started as one trailer outside Mash Mechanix on Pikes Peak Avenue. Then The Cantina opened as the flagship sit-down. Then Old Colorado City. Then we became the permanent food cart at Urban Animal Beer Co’s Star Ranch taproom. Four locations later, the model hasn’t changed: we park where the beer is good, we smoke real wood, and we let the brewery pour.

Where is the best BBQ in Colorado Springs?

Stage Stop BBQ has four locations across Colorado Springs: The Cantina flagship at 6620 Old Stage Rd, plus brewery-partner stops at Mash Mechanix downtown, Old Colorado City westside, and Urban Animal at Star Ranch on the southside. Every location runs Chef Eve Natasha's recipes, real wood smoke, and a 14-hour brisket.

What kind of BBQ does Stage Stop serve?

Texas-influenced offset-smoked BBQ with Carolina and Alabama sauce styles on the side. Post oak for brisket, pecan for ribs, apple for poultry. No gas assist, no liquid smoke. Sauce is served on the side by default.

Who is Chef Eve?

Eve Natasha is the owner, founder, and head chef. She grew up on Old Stage Ranch, learned to smoke from her dad, and writes every recipe at every Stage Stop location. She is a 2024 James Beard Best Chef Mountain finalist.

Is Stage Stop BBQ open today?

The Cantina is open Wed–Sun 11a–8p. Mash Mechanix and Old Colorado City are open Thu–Sun. Urban Animal at Star Ranch is open daily. See each location page for live hours.

Do you have gluten-free BBQ options?

Yes. Most meats are naturally gluten-free — no flour in our rubs or sauces. All sides are clearly marked GF on the menu. Tell the cashier and we'll glove-change.

Where can I order Stage Stop online?

Toast online ordering is wired per location. Pick your closest stop at stagestopbbq.com/menu#order. Local delivery via Uber Eats and DoorDash from each location.
