Catering FAQ.

What's the minimum order?

20 people for drop-off · 30 for Pitmaster Spread · 50 for Full Smokehouse on-site. Below that, we'll point you at a great alternative — no hard feelings.

How far will you travel?

30 miles from Colorado Springs is free. Up to 90 miles with a delivery fee. Anywhere in Colorado with enough notice and the right number of people.

Dietary accommodations?

Vegetarian and vegan plates available on every package — three options each. Gluten-free buns on request. Halal and kosher: ask us, we'll be honest about what we can and can't do for your event.

Alcohol — can you handle it?

We don't pour, but we'll coordinate with your bar service and we can recommend brewery partners (with rep contacts) if you want beer at the event. Same for spirits.

What about gratuity, tax, fees?

18% gratuity (split among the catering crew · 100% of it). State + local sales tax. Delivery fee depends on distance — shown up front, no surprises.

Deposit and cancellation?

25% deposit holds the date. Refundable outside 14 days. Inside 14 days, deposit is non-refundable but applies to a future event within 12 months.

Do you cater at venues that have their own kitchen rules?

Yes — we work with most of the major Colorado Springs, Denver, and mountain wedding venues regularly. We carry $2M liability, full ServSafe certification, and our COI on file for the big ones.

How far ahead do I need to book?

Summer weekends book 8–12 weeks out. Holiday season (Nov–Dec) opens in August and fills by October. Weekday corporate lunches we can usually turn in 7–10 days. Inside a week, ask — we keep a little flex on the smoker for last-minute requests.

What's the difference between drop-off and served on-site?

Drop-off: we deliver hot in chafers, set the buffet, walk you through it, and you run it. Served on-site: a pitmaster stays to carve, replate, and answer questions. Drop-off is BBQ Basics + Pitmaster Spread; on-site is built into Full Smokehouse or adds $4/person plus pitmaster fee on the others.

What equipment comes with catering?

Chafers, serving utensils, sterno, and disposable serving ware are included on every package. Pitmaster Spread adds real serving platters. Full Smokehouse adds linens, real platters, table runners, and the carving station setup. We pack out everything we brought.

Can you handle last-minute orders?

Sometimes. Drop-off for 20–50 people inside 7 days — we'll quote if the smoker calendar has room. Anything over 100 or full-service inside 14 days usually means we're already booked. Always worth a call.

Do you offer military or non-profit discounts?

Active military, veterans, first responders, and registered 501(c)(3) non-profits: 10% off the per-person price on drop-off packages. Bring proof or paperwork. Doesn't stack with weekday corporate rates.

What's the per-person price range?

BBQ Basics starts at $14/person (drop-off, one meat, two sides). Pitmaster Spread is $22/person (two meats, three sides, dessert). Full Smokehouse is $32/person (three meats, four sides, pitmaster on-site). Custom builds quoted line-by-line.
