Stage Stop in OCC.
The Westside stop.
The Old Colorado City stop is parked in the historic Westside district — brick buildings, shops up and down the block, the friendliest karaoke night in town on Fridays at the bar next door. The trailer pulls in Thursday through Sunday and sets up on the same patch of asphalt every week, between the antique store and the candy shop. Unlike our other two trailer stops, OCC is not parked at a single brewery — it is parked at the district. Westside has its own crowd: long Saturday browsers, locals doing the OCC walk with a coffee, families dropping in after the shops close. We cook the full menu here, same recipes as the Cantina, but the rhythm is slower. People sit on the curb with a plate and a sweet tea and watch the neighborhood move. Bring the kids during the day. Bring friends after 6p. Bring a dog any time we are open. The trailer is the only Stage Stop where the line moves at the pace of a Saturday afternoon, on purpose.
The brewery pours. We feed.
Westside Colorado Springs has the highest density of independent shops in the city and one of the lowest densities of good food. We took a parking spot that used to belong to a defunct sandwich truck and turned it into a Stage Stop. The local merchants association sends their lunch crowd our way. We send their browse-the-shops crowd back. No brewery on this one — yet. We are in conversations with one of the OCC taprooms about a 2026 partnership. Until then, the trailer is the destination. Bring the beer from down the block if you want a pint with your brisket; we will not stop you.
What to drink with the brisket on the Westside.
We don't pour at this stop — bring your beer in from one of the Westside taprooms. Here is what works.

What we cook at this trailer.
Same recipes as the Cantina, scaled to a trailerkitchen. Sauces are Eve’s. The pickle brine is Eve’s. If it’s on the menu here, she signed off.
