The core menu is stable — brisket, ribs, pulled pork, the sauces, the Mac Bowl. Daily specials rotate based on what came off the smoker overnight and what Eve felt like running. Truck-only specials show up at the brewery stops some weekends.
Dairy lives in the mac, the slaw, the cornbread, and the white sauce. Soy is in the brioche buns. We don't cook with peanuts, but we can't guarantee a nut-free kitchen — tell the cashier and we'll glove-change and pull a fresh container.
Yes. Half-sandwich plus one side, $9 — pulled pork, brisket, or chicken on a slider bun. Mac, cornbread, or apple as the side. Free birthday meal applies to kids too.
Brisket usually goes first — we post a brisket countdown on the chalkboard inside The Cantina as we get close. When it's gone, it's gone. We don't hold back portions; you get the day's smoke or you come back tomorrow.

Smoked meats keep four days in the fridge, three months in the freezer if you wrap tight. Reheat brisket low and slow — 250°F covered, with a splash of beef broth — not the microwave. Sauces last a month opened.
