The mac-and-cheese bowl is a load-bearing menu category.

Cavatappi, three cheeses (sharp cheddar · gruyère · cream cheese), crisped on a flat-top, then loaded. This is our most-ordered item across all four locations.

About the menu

Questions about the food.

How long do you smoke the brisket?

Fourteen hours minimum, over post oak. Salt-and-pepper rub only — no sugar. Sliced to order. Brisket is available daily at every location until it sells out.

What is the Burnt-End Mac Bowl?

Our brand-IP dish. Cavatappi pasta, three cheeses, brisket burnt ends, scallion, crisped on the flat-top. $15 at every Stage Stop.

What sauces do you make?

Five house sauces: Carolina Gold (yellow mustard + brown sugar), Alabama White (mayo + black pepper), Texas Black (molasses + ancho), Sweet Heat (peach + habanero), and Stage Stop Original (tomato base, vinegar finish). All five available as a $4 sauce flight.

Are there vegetarian or vegan options?

Yes. Smoked Mushroom & Halloumi sandwich, 12-hour Smoked Tofu Plate (vegan), and Just the Mac (vegetarian). Most sides are veg-friendly.

What is the price range?

Sandwiches $15–17, plates $18–22, sides $5, sauce flight $4. Same posted prices at every Stage Stop — no upcharges between locations.

How do I order online?

Go to stagestopbbq.com/menu#order and pick your closest location. Toast routes the order to that kitchen. Pickup in 15–20 minutes; local delivery via Uber Eats and DoorDash.

How often does the menu change?

The core menu is stable — brisket, ribs, pulled pork, the sauces, the Mac Bowl. Daily specials rotate based on what came off the smoker overnight and what Eve felt like running. Truck-only specials show up at the brewery stops some weekends.

What allergens are in the menu beyond gluten?

Dairy lives in the mac, the slaw, the cornbread, and the white sauce. Soy is in the brioche buns. We don't cook with peanuts, but we can't guarantee a nut-free kitchen — tell the cashier and we'll glove-change and pull a fresh container.

Is there a kids menu?

Yes. Half-sandwich plus one side, $9 — pulled pork, brisket, or chicken on a slider bun. Mac, cornbread, or apple as the side. Free birthday meal applies to kids too.

What happens when something sells out?

Brisket usually goes first — we post a brisket countdown on the chalkboard inside The Cantina as we get close. When it's gone, it's gone. We don't hold back portions; you get the day's smoke or you come back tomorrow.

Can I order ahead for a big group?

Yes, up to 10 people through Toast online — pick your pickup time and we'll have it bagged and labeled. For 10 or more, use the catering page so we can plan the smoker count instead of robbing the line.

Are online and in-person prices the same?

Same posted prices on Toast direct. Uber Eats and DoorDash add their own platform markup — that's on them, not us. Order direct at stagestopbbq.com/menu#order for the menu price.

What's in the sauce flight?

All five house sauces in small ramekins — Carolina Gold, Alabama White, Texas Black, Sweet Heat, and Stage Stop Original. $4 add-on. We serve sauce on the side, always, so you can read the meat before you dress it.

How should I store leftovers?

Smoked meats keep four days in the fridge, three months in the freezer if you wrap tight. Reheat brisket low and slow — 250°F covered, with a splash of beef broth — not the microwave. Sauces last a month opened.
