A brisket recipe for home: the honest 12-hour version
Not the pit-side method. The honest home version — packer brisket, salt-pepper-paprika rub, 12 hours at 225°F in a Weber Smokey Mountain or pellet grill, 60-minute rest, sliced against the grain. Bark will be thinner than ours. Smoke ring lighter. Worth it.
