Best BBQ
Downtown Colorado Springs.
Written by Chef Eve Natasha. Updated June 2026. Honest. No sponsored placements.
Downtown Colorado Springs has densified through 2024–26. New breweries on Pikes Peak Avenue, new patio seating on Tejon, a real Friday-night dining scene for the first time in a decade. But most downtown BBQ is hotel restaurant or banquet-level — not a real pit. The one wood-smoked operation parked downtown every Thursday–Sunday is Stage Stop BBQ at Mash Mechanix Brewing on 429 E Pikes Peak Ave.
One real pit. One brewpub. That’s the downtown BBQ map.
The downtown Colorado Springs BBQ field is genuinely thin. That’s not us spinning the read in our favor — that’s the read. The Gazette’s 2025 BBQ ranking put The Chuckwagon 719 at #1 in the city, but Chuckwagon is at 6453 Omaha Blvd in the Cimarron Hills area east of Powers. Front Range Barbeque opened its second location at 2220 Academy Place on May 2, 2026; their original Old Colorado City storefront at 2330 W Colorado Ave has been closed for renovations since November 2025.
None of those addresses are downtown. They’re a drive from the courthouse, from Tejon’s patios, from the Antlers and the Mining Exchange. If you’re staying at a downtown hotel, walking out of an event at Ent Center, or wrapping a meeting at the courthouse and you want wood-smoked BBQ before you’ve put the car keys back in your pocket, your real option is Stage Stop BBQ at Mash Mechanix Brewing, five minutes east of Tejon on Pikes Peak Ave. The other honest option is Phantom Canyon Brewing on the Tejon/Pikes Peak corner, where the brewpub menu includes a smoked pulled pork sandwich — not a dedicated pit, but legitimate downtown food with a BBQ slot.
That’s the field. Two operators inside the downtown core. One pit. One brewpub. Everything else worth eating in this metro is a drive away — and worth it, but a drive.
Inside the downtown core.
Operators with an address inside the downtown business district. Addresses, days, walk times from the Tejon Street corridor. Verified June 2026 against each operator’s own site.

Phantom Canyon Brewing Not a dedicated pit — a brewpub that carries BBQ on the menu. Listed for honesty. | Brewpub with smoked pulled pork on the menu | Daily | 2 E Pikes Peak Ave | Corner of Tejon and Pikes Peak — 0 min | House | Pulled pork sandwich · brewpub menu |
We included Phantom Canyon because it’s an honest read on the downtown BBQ menu — pulled pork on a brewpub menu is still pulled pork. We excluded operators outside the downtown district even when they’re great (Chuckwagon, Porkbutt, Front Range, Bird Dog, Bourbon Brothers, BC’s, Mission). Those are covered on the city-wide guide.
Mash Mechanix Brewing. Where we park downtown.
Mash Mechanix is a working brewery on 429 E Pikes Peak Avenue, three blocks east of Tejon. Six taps rotate weekly. Their flagship Hazy Six IPA — Citra, Mosaic, Galaxy — pours all year. Stovepipe Stout is an oatmeal stout with a vanilla finish. Goldspring is a Czech-style pilsner. The taproom is warm, the brewers are on the floor most nights, and the crowd is the friendliest brewery crowd in the city.
Our trailer parks in the back lot, which is shared with a pinball arcade. The patio is covered and heated through the cold months. Dogs are welcome. We took the daily food slot here in 2023, and Mash Mechanix’s own website now describes the arrangement as “food available daily from Stage Stop” — which is the cleanest possible signal that the pairing works.
This was Stage Stop’s second-ever brewery partnership and the one that proved the model could scale beyond the ranch. Mash Mechanix is the reason there is now a Stage Stop at Urban Animal and at Old Colorado City. If you want to understand the brewery-parked Stage Stop story in one visit, this is the visit.
Full menu, same as every Stage Stop: 14-Hour Brisket on post oak, St. Louis Ribs on pecan, Pulled Pork, the Burnt-End Mac Bowl, Smoked Turkey Sandwich, the sauce flight ($4) with Carolina Gold and Alabama White side by side. Sauce on the side by default. Always. Full Mash Mechanix page for hours, photos, and the rotating-tap list.
Why this list is short. Honestly.
We get the question every week. “Where’s the downtown BBQ joint?” The pitmaster answer is: there isn’t a downtown sit-down BBQ restaurant in Colorado Springs. Bourbon Brothers Smokehouse & Tavern is the upscale sit-down with the bourbon program — it’s at 13021 Bass Pro Dr, near the Bass Pro on the north side. Twenty-minute drive from Tejon. Not downtown.
The Chuckwagon 719 is the Gazette’s 2025 #1 pick. It sits at 6453 Omaha Blvd in Cimarron Hills, east of Powers. Fifteen-to-twenty-minute drive depending on the light at Platte. Not downtown.
Front Range Barbeque’s second location runs at 2220 Academy Pl — the Academy corridor, ten-to-twelve minutes north of Tejon. Bird Dog’s closest location is Stetson Hills, fifteen-plus minutes east. Mission BBQ is on Interquest, past the Air Force Academy. Rudy’s isn’t inside city limits at all.
That’s the honest map. The historic downtown business district doesn’t have its own dedicated sit-down BBQ kitchen. Phantom Canyon’s brewpub does a pulled pork sandwich and that’s a real downtown option. We park a trailer five blocks east of Tejon at Mash Mechanix. That’s it. That’s why we’re here.
The good news is that “downtown BBQ in Colorado Springs” is a one-stop question. We’re the stop.
The Cantina. Fifteen minutes south.
The Mash Mechanix trailer is the right answer if you’re staying downtown and walking. If you want the full sit-down Stage Stop experience — indoor seating, full bar, live music Saturday nights, a Pit Master Tasting on the first Tuesday of every month — that’s The Cantina, our flagship on the family ranch at 6620 Old Stage Rd. Fifteen minutes south of downtown by car. Open Wednesday through Sunday, 11a–8p.
Same chef, same recipes, same sauces. The Cantina is where Eve writes the menu and tests new sauces. Three Cantina-only specials run on the board at any time. The drive is part of the visit — the road winds up into the Cheyenne Canyon foothills and the view from the patio is the reason we built the flagship where we built it.
What people ask us downtown.
Where exactly downtown can I get real BBQ in Colorado Springs?
429 E Pikes Peak Ave, inside Mash Mechanix Brewing. Stage Stop BBQ is the resident pit. Thursday through Sunday, wood-smoked brisket, ribs, pulled pork, and burnt-end mac. Five minutes' walk east of Tejon Street.
Is Mash Mechanix walkable from Tejon Street?
Yes. From the intersection of Tejon and Pikes Peak Ave, head east about five minutes — three blocks past the Phantom Canyon corner. There's a back-lot patio shared with a pinball arcade.
What time does Stage Stop BBQ close at Mash Mechanix?
Thursday and Friday we run 4p to 9p. Saturday 12p to 10p. Sunday 12p to 8p. We sell out of brisket some nights — call (719) 555-0142 if you're coming in late.
What beer pairs with the brisket at Mash Mechanix?
Hazy Six IPA cuts through the post-oak smoke on the brisket sandwich. Stovepipe Stout — oatmeal stout with a vanilla finish — is the move with the burnt-end mac. Goldspring Lager works for the pulled pork. Mash Mechanix's taproom rotates six taps weekly so the pairings stay honest.
Do you cater downtown events from this location?
Yes. Office lunches, brewery buy-outs, downtown weddings, conferences at the Antlers and the Mining Exchange — all served out of our catering van, same smoke as the trailer. Quote requests go through the catering page.
Brisket. Beer. Five minutes from Tejon.
Thursday through Sunday. Wood-smoked. Sauce on the side. We’ll have brisket on the cutting board and Mash Mechanix will have the Hazy Six poured. Walk over.
