Here’s where Stage Stop fits, written by the chef who runs the pits. The closest sit-down is Mash Mechanix downtown, about fifteen minutes south of the AFA North Gate. The post-game dinner pick is The Cantina flagship, about twenty-five minutes south of Falcon Stadium. Catering, we run direct.

Stage Stop catering serves USAFA cadet families for Parents Weekend and graduation, AFA football tailgates at Falcon Stadium, and the change-of-station crowd moving in or out of the Springs. Mash Mechanix is the closest sit-down option to the AFA North Gate — about fifteen minutes south on I-25. The Cantina is the post-game dinner pick after Falcon Stadium games — about twenty-five minutes south via I-25 and Old Stage Rd.

Chef Eve Natasha writes every recipe at every location. Post oak on the brisket. Pecan on the ribs. Fourteen hours, six hours. Sauce on the side by default — taste before you decide. We’ve been a Colorado Springs family ranch since 1993, and we cater military families every season.

The three jobs we get every season.

Most calls about USAFA fall into one of three shapes. Each one has its own logistics — lead time, headcount, where the food sets up.

Parents Weekend dinners (Sept / Apr).

Parents Weekend brings cadet families to town for a long Friday-through-Sunday stretch. The cadets get a pass, the parents fly in, and someone needs to feed twenty people in a hotel suite or a rented Airbnb without anyone wanting to spend Saturday night at a chain steakhouse. We deliver hot, packaged for buffet service — brisket sliced, pulled pork pre-mixed, sides in half-pans, sauce on the side. Two-week lead time in normal months, three weeks for Parents Weekend itself. Pitmaster Spread at $22 a head is the sweet spot for most cadet-family dinners — two meats, three sides, dessert, sauce flight.

Falcon Stadium tailgates (Sept–Nov).

Football Saturdays at Falcon Stadium pull tailgate crowds into the lots three to four hours before kickoff. Our cambros hold temp for four-plus hours, which means we can deliver to the lot at 9 a.m. for a 1 p.m. game and the brisket is still right at kickoff. We pack pulled pork, brisket, smoked turkey, burnt-end mac, smoked beans, slaw, pickles, sauce flight, and bread — everything labeled, nothing requiring on-site reheat. Two-week lead time during the season, one week in a pinch. If the game is night kickoff and you want a pitmaster on-site to slice brisket to order, that’s the Full Smokehouse tier.

Change-of-station send-offs.

A PCS move out of Colorado Springs is a strange week — the house is half-packed, the kitchen is in boxes, and the squadron wants to throw a goodbye. We do that job every month. BBQ Basics at $14 a head is the honest pick when twenty people are eating off paper plates in a garage; one meat, two sides, bread, sauce, done. Same menu works for incoming-PCS welcome dinners — you don’t want to cook on day three in a new house. Three-day lead time for jobs under fifty people. Mention your unit in the quote and we’ll do right by you.

Mash Mechanix is our second-ever brewery partnership and the closest sit-down Stage Stop pit to the AFA North Gate. The drive is straight south on I-25 — exit at Bijou or Uintah, drop into downtown, and you’re at 429 E. Pikes Peak Ave. in about fifteen minutes most days. Allow a few extra on Friday afternoons or after a Falcon Stadium game lets out.

The trailer is parked in the back lot Mash shares with a pinball arcade. Six rotating taps on the brewery side, wood-fired BBQ on ours. Hazy Six IPA, Stovepipe Stout, Goldspring Lager. Heated covered area for the shoulder seasons — Parents Weekend in late September often drops into the 40s after sundown. Dog-friendly patio if your cadet’s family-day dog is in town.

Hours: Thursday and Friday 4 p.m. to 9 p.m., Saturday noon to 10 p.m., Sunday noon to 8 p.m. The pinball arcade is worth fifteen minutes after dinner — cadets and parents both end up there. Park free on Wahsatch. Walk to Phantom Canyon if anyone wants a second beer.

After the game lets out at Falcon Stadium, the natural play is dinner south of town. The Cantina at 6620 Old Stage Rd.is our flagship — the mothership where the recipes are written and the sauces are batched. From Falcon Stadium, drop south on I-25, exit toward Cheyenne Boulevard, then climb Old Stage Rd. up into the foothills. Most game-day Saturdays that’s about a twenty-five-minute drive.

Full bar. Indoor seating. Live music Saturday nights, which lines up with home football Saturdays through the season. Open Wednesday through Sunday, 11 a.m. to 8 p.m. The Cantina menu includes the full Stage Stop line plus three Cantina-only specials Eve rotates monthly. Reservations accepted, and worth making on a home-game weekend.

Eve hosts a Pit Master Tasting the first Tuesday of every month — ticketed, limited seats, the only night the Cantina opens on a Tuesday. Cadet families who plan a Parents Weekend visit around the first week of the month sometimes hit it. Worth asking when you book.

Times are typical-day estimates and depend on traffic. We won’t pretend a pit is closer than it is — the Academy is on the north end of town and the Stage Stop pits cluster downtown and south.

Per-person pricing, real numbers. We don’t do custom-quote-only theater — here’s the menu and the price. Travel and tax are extra. Off-base delivery and setup included. For on-base events we coordinate with base catering services — ask in the quote.

BBQ Basics — $14 / person

20-person minimum

One meat, two sides, bread, sauce. The honest pick for a garage PCS goodbye, a tailgate of twenty, a Parents-Weekend lunch. Pick brisket, pulled pork, or smoked turkey. Sides: smoked beans, slaw, mac, potato salad, pickles — pick two.

Pitmaster Spread — $22 / person

30-person minimum

Two meats, three sides, dessert, the four-sauce flight. The Parents Weekend dinner sweet spot — enough variety to make picky cadets happy without doubling the budget. Brisket plus pulled pork is the most-ordered combo. Dessert is banana pudding or skillet cobbler.

The Full Smokehouse — $32 / person

50-person minimum

Three meats, four sides, two desserts, on-site pitmaster slicing brisket to order. The graduation-party tier. We’ll send a member of the pit team — often Eve herself for the bigger jobs — with a slicing station and the full sauce lineup. Looks like a restaurant. Tastes like the pit.

Military families: ask us about military rates when you request a quote. We’d rather show you the number in writing than promise a fixed percentage we can’t honor on every job. We work with military families regularly.

Where's the closest BBQ to the Air Force Academy?

Mash Mechanix Brewing Co. at 429 E. Pikes Peak Ave. in downtown Colorado Springs is the closest sit-down Stage Stop pit to the AFA North Gate — about a 15-minute drive south on I-25, exiting at Bijou or Uintah and dropping into downtown. The Cantina flagship at 6620 Old Stage Rd. is roughly 25 minutes south of Falcon Stadium via I-25 and Old Stage Rd. Both serve the same wood-smoked menu Chef Eve writes for every Stage Stop.

Can you cater on-base at USAFA?

We coordinate with base catering services for on-base events and serve all off-base catering directly. Base access rules and approved-vendor lists change, so the honest answer is: tell us the event in your quote and we'll work out the logistics together. Off-base — Peterson Field officers' clubs, Garden of the Gods event venues, downtown hotels, Old Stage Rd. private dinners — we run direct and on our normal lead times.

Do you cater for AFA football tailgates at Falcon Stadium?

Yes. Tailgate catering is one of our regular September-through-November jobs. We deliver pulled pork, brisket, smoked turkey, burnt-end mac, smoked beans, and slaw in insulated cambros that hold temp for four-plus hours — so you set up at the lot, eat through warmups, and still have hot brisket at kickoff. Two-week lead time during football season. Volume matters: 20-person minimum on BBQ Basics, 50-person minimum on the Full Smokehouse with on-site pitmaster.

Is there a military discount?

Mention your status in the quote — we work with military families regularly and want to take care of you. We don't publish a fixed percentage here because catering quotes are built from headcount, menu, and travel; we'd rather show you the number in writing than promise something we can't honor on every job.

How early do I need to book for graduation week?

Graduation week is the busiest stretch of the year for Colorado Springs catering. Book at least eight to ten weeks ahead for a dinner party of 30+. We hold a small number of graduation-week slots open through April but they go fast — every year we turn down jobs in late May because the pits are spoken for. If you're under four weeks out and reading this, call anyway — we'll tell you straight whether we can do it.
