Founded on the family ranch in 1993, we now run four locations — one brick-and-mortar flagship (The Cantina) and three brewery-parked stops. Every recipe is written by Chef Eve Natasha. ### Smoke — Real wood, no shortcuts. Post oak and pecan, hand-loaded into Texas-style offsets. No gas assist. No liquid smoke. Brisket sits for fourteen hours. Ribs for six. The smoke does the work. ### Beer — The brewery is the destination. We park where the beer is good. The build is simple — cavatappi, a three-cheese bechamel, fourteen-hour brisket burnt ends folded in at the end, a flat-top crisp, scallion, Carolina Gold sauce on the side. The Smoked Turkey Sandwich is the menu sleeper — the order regulars circle back to after they've tried everything else. Brined twenty-four hours, smoked eight hours over hickory with a pecan finish, sliced thin to order, on sourdough with a house dill pickle and Alabama White sauce on the side. The thinking: turkey breast is one of the easiest meats to ruin and one of the hardest to make compelling. No foil, no spritz, no shortcuts. If you ask a competition cook how to do ribs, you get the 3-2-1 method — three hours of smoke, two hours wrapped in foil with butter and brown sugar, one hour unwrapped with sauce. Rub: Brisket bark plus a second-pass coat of 16-mesh pepper. No sugar.. Daily at every location, while the brisket point lasts. Sells out faster than brisket. Brisket point, cubed, re-smoked 90 minutes with bark and sauce. Kansas City origin. The candy of brisket. Burnt ends are the candy of brisket. The phrase is old, from Kansas City — Arthur Bryant's gave them away free at the counter in the 1950s because the point of the brisket cooked harder than the flat and the trimmed cubes piled up next to the slicer. Joe's KC built a whole sandwich around them. Two generations later, the burnt-end cube is one of the most-ordered single items in American BBQ. Ours hold to the original idea: brisket point, cubed, re-smoked with a second pass of pepper and a glaze of red sauce. Hot, sticky, sweet, smoke-forward. Most of our wedding couples book the Pitmaster Spread eight to twelve weeks ahead. We bring the smoker. Headcount range: 60 – 280. Lead time: 8 – 12 weeks. Most wedding couples land on the Pitmaster Spread — two meats, three sides, dessert, full sauce flight, real platters. Custom builds quoted line-by-line. We book the date with a 25% deposit. Eight weeks out, you pick the two meats — brisket and pulled pork is the default, ribs and chicken is the close second. Six weeks out we lock the sides — slaw, beans, mac, greens, cornbread, pickles. Three weeks out, your coordinator (or you) walks us through the venue. We confirm the carving table, the buffet line, the trash plan, and where the smoker can sit if you want it visible. Seventy-two hours out, headcount locks. Day-of, we roll in at the time on the contract, fire up the chafers, set the line, walk your coordinator through the timing, and stay on-site until last plate goes out — then we pack out everything we brought. No surprises, no overage invoice arriving the following Tuesday. Real numbers locked at 72 hours, real food on the table at call time, and a coordinator check-in 7 days before so nobody is texting at midnight about a vegetarian count. ### [Corporate BBQ Catering](https://stagestopbbq.com/catering/corporate) Box lunches, hot buffets, plated meals. Weekly contracts, net-30 invoicing for repeat clients, and a single Slack thread for last-minute headcount swings. Twenty people up to two thousand. Headcount range: 20 – 600. Lead time: 1 – 2 weeks (recurring contracts faster). Drop-off office lunches start at the BBQ Basics tier — one meat, two sides, brioche, sauce on the side. Larger all-hands and holiday parties step up to Pitmaster Spread or Full Smokehouse. We run weekly drop-off contracts for offices around Colorado Springs — Lockheed Martin, USAFA, Children's Hospital Colorado, a few of the downtown law firms. Standard cadence: one weekly day (Tuesday or Wednesday is most common), 40 – 480 headcount, individually boxed or buffet style. You give us a 6-week menu rotation, a single contact, and a recurring PO. We invoice net-30. Headcount confirms by EOD Friday for the following week, the smoker is loaded that Sunday, and we arrive in the lobby on the agreed day at the agreed time. No surprises, no missed deliveries. The recurring rate is cheaper than one-off pricing — most of our weekly clients are paying inside the BBQ Basics tier even when the menu rotates upward to include ribs or burnt-end mac. We open the holiday calendar in August and most prime weekends are gone by October. Quote now, save the date. Headcount range: 30 – 600. Lead time: 6 – 16 weeks (book by August for December). Holiday parties typically land on the Pitmaster Spread for 30 – 150 guests, or the Full Smokehouse for 150+. Drop-off office parties under 80 fit BBQ Basics with a dessert add-on. The first Friday and Saturday in December are the two most-requested days on our calendar all year. They are usually gone by Labor Day. The full December calendar starts opening in August and is roughly 70% booked by the end of September. November (Thanksgiving-week corporate parties, post-Thanksgiving family gatherings) is lighter but still tight. January (post-holiday team kickoffs, dry-January-but-still-want-good-food office gatherings) opens up. If your holiday party has a fixed date, get the quote in by August and the deposit down by September. If your holiday party is flexible by a week, ask us for the open dates first — we can usually find you a Wednesday or Thursday in early December that's wide open and 10% cheaper than the Saturday. ### [Birthday BBQ Catering](https://stagestopbbq.com/catering/birthday) Backyard birthdays, milestone parties, kid parties with grown-ups doing the eating. Drop-off or on-site with a pitmaster, two-week lead time for most weekends. Headcount range: 20 – 200. Lead time: 2 – 4 weeks (8 weeks for milestone parties on prime Saturdays). Most birthday parties under 80 land on BBQ Basics with a meat upgrade or dessert add-on. Milestone birthdays (40th, 50th, 60th) often step up to the Pitmaster Spread. For a backyard birthday under 60 people, BBQ Basics is what you want: one meat (pulled pork is the most-ordered birthday meat — kid-friendly, slider-friendly, doesn't dry out), two sides (slaw and beans is the default, swap in mac for the kids), brioche buns, pickles, three sauces. We drop off in chafers, set the line on a table you point us at, walk you through it, leave. You run it. Most backyard birthdays land in the 30 – 50 range and budget cleanly under what an equivalent caterer would charge for pizza-and-wings catering. Brisket as the meat upgrade adds a few dollars per person but is what we'd order for our own birthday. Sauces stay on the side so the kid plates aren't sauced and the adult plates can build their own. ### [Tailgate + Sports Game BBQ Catering](https://stagestopbbq.com/catering/sports-game) Drop-off BBQ for Air Force home games, Switchbacks watch parties, Broncos Sundays, March Madness brackets. Hot in chafers, plates and forks included, ready in two hours. Headcount range: 20 – 150. Lead time: 1 – 2 weeks. Tailgates and watch parties almost always land on BBQ Basics — one meat, two sides, brioche, sauce on the side. Add a second meat (hot links are the most-ordered sports add-on) at the line-item rate. Air Force home games are the most-requested tailgate booking on our calendar. We deliver to the Falcon Stadium lots starting two hours before kickoff, set up at your tailgate spot, drop chafers, three sauces, plates, forks, napkins, and a stack of brioche. Pulled pork is the default tailgate meat — feeds clean, holds in the chafer through halftime, and the slider option works for guests who want to grab one between drives. Hot links are the most-ordered add-on; we cook them whole, slice on-site, brown mustard, pickled red onions. We pack out everything we brought. Coordinate with us on the lot number and the spot — we'll find you. If you want the smoker visible at the tailgate (it makes for photos), ask at quote; we'll quote the fee for parking the trailer for the full pre-game window. ### [Graduation Party BBQ Catering](https://stagestopbbq.com/catering/graduation) Backyard graduation parties, multi-family pool-graduation gatherings, USAFA commissioning parties. Most-ordered package is BBQ Basics + a half rack of ribs. Book early — the smoker fills. Headcount range: 40 – 200. Lead time: 8 – 12 weeks (book by March for May/June). Most grad parties land on BBQ Basics + a ribs upgrade. Bigger USAFA commissioning parties (150+) often step up to the Pitmaster Spread for the second meat and dessert station. Graduation season in Colorado Springs runs concentrated — the second-to-last and last Saturday of May, the first Saturday of June, and (for USAFA) the Wednesday and Saturday of commissioning week. Most of those dates fill on our calendar by the end of March. If you've got a graduation party on a fixed date (you do — graduation dates aren't moveable), get the quote in by January and the deposit down by February for any chance at the prime Saturdays. We hold a few inside-the-week slots open for last-minute requests — usually drop-off, under 60 people — but the big backyard graduation parties for 80 – 200 lock up two months in advance. ### [Funeral Reception BBQ Catering](https://stagestopbbq.com/catering/funeral-reception) BBQ catering for memorial gatherings and celebrations of life. We can usually turn an order inside a week. No minimum push. We'll be respectful, on time, and stay out of the way. Headcount range: 20 – 200. Lead time: Same week possible · 3 days notice ideal. Memorial receptions almost always land on BBQ Basics, drop-off, two meats or one meat plus a turkey breast. We don't upsell here. When someone calls about a memorial reception, we move differently. We don't run the standard sales script. We don't push you to upsize. We get the date, the headcount, the venue (home, church hall, funeral home), the time window, and a single contact. We'll have a quote back the same day, and we can usually run a memorial reception inside a week — sometimes inside three days for drop-off under 60 people.
